About tomato rice recipe – As the name defines tomato rice is made using tomatoes and few spices. Tomato rice is made in many ways based on regions. Few make it as aa one pot dish, few make it using pre cooked rice. I am showing how to make using pre cooked rice. This is very easy, yet tasty dish and a simple lunch box recipe. You can have this with simple onion raita, it tastes perfect.

Tomato rice recipe – Procedure

1. Firstly, boil rice and keep it ready. In a pan, heat some oil in a pan add mustard seeds, jeera seeds, chana dal and urad dal, let them fry them for a minute. Add green chillies and fry them.

Tempering

2. Add finely chopped onions and curry leaves, fry them until translucent. Add ginger garlic paste and mix it well.

3. Add finely chopped tomatoes and cook them until mushy. Put little turmeric powder and salt for taste and cook it.

4. Tomatoes are cooked mushy, add coriander seed powder, red chilli powder and jeera powder and mix it well.

5. Add water to this and cook it well until it reduces.

6. Add boiled rice and mix it well. At last add few coriander leaves and mix it well.

7. Tasty tomato rice is ready.

Notes

  1. Cook the rice fluffy and non sticky. Do not pressure cook it, cook it in a pan so that the rice will be fluffy.
  2. Jeera powder is optional, but it enhances the flavor of the dish.
  3. If you feel the tomato mixture is excess for the rice, then you can keep some aside. You can have it as curry for dosa, chapati or rice.

Ingredients

  • 3 medium size Tomatoes
  • 2 cups boiled rice
  • 1 medium size onion
  • 1 tsp chana dal
  • 1 tsp urad dal
  • 3 no. green chillis
  • 1 tsp ginger garlic paste
  • 1 tbsp. red chiili powder
  • ½ tbsp. coriander seed powder
  • 1 tsp jeera powder roasted cumin powder
  • ½ tsp turmeric powder
  • ½ tsp mustard seeds
  • ½ tsp cumin seeds jeera seeds
  • few curry leaves
  • few coriander leaves
  • salt to taste
  • water as required
