Ragi and its uses

Ragi is a whole grain which is popular in South India. Ragi flour is made into powder out of ragi grain. It has high protein and mineral content. It is an ideal source of protein for vegetarians. Ragi flour is made into porridge, roti, halwa, ragi ball or mudda and ladoo.

Ragi is gluten free and rich in fiber that helps with weight lass and diabetes. It contains calcium, amino acids and Vitamin D.

Ingredients

  1. Ragi Flour
  2. Jaggery/ Sugar – You can use any sweetener for this recipe. Dates, palm jaggery also suits well to make this recipe . If you are using sugar powder it and add. Here I am using Jaggery.
  3. Nuts and Seeds – You can use any nuts and seeds of your choice. I am using walnuts, pumpkin seeds and sesame seeds.
  4. Ghee – Ghee is one of the important ingredient. It enhances the flavor of any sweet. Desi or homemade ghee gives rich flavor to the ladoo.

How to make Ragi ladoo – Step by step procedure

Turn on the stove. Take a pan, add half cup of water and add 150 grams of jaggery. Keep the flame in low and let the jaggery melt.

Once the jaggery melts properly turn off the stove. Strain the jaggery water into a bowl and keep it aside and let cool.

Meanwhile, take a pan dry roast 1 table spoon of sesame seeds and keep them aside.

Add 1 table spoon of ghee to the same pan and roast walnuts, pumpkin seeds and cashew nuts.

Take a wide pan add 1 cup of ragi flour and roast it till the aroma releases from the flour. It takes around 4 to 5 minutes. Turn off the stove and cool it completly.

Now add the roasted sesame seeds and nuts to the flour, mix it thoroughly. You can add ghee or cardamom powder at this stage(optional).

Then regularly add the jaggery water to the flour and mix it. Mix it well as shown below.

Take small portions of the mixture and make it into balls.

Tasty and healthy ragi ladoo is ready. Store it in an air tight container.

Tips

  • We can use jaggery directly without melting it in water, but it may contain sand particles and small stones. So, melting the jaggery is recommended. You can refrigerate the leftover jaggery water and use it as a sweetener in tea coffee etc.
  • While making ladoos apply some ghee to your hands, so that the mixture will not stick to your hands and you can make nice round shaped ladoos.

Variations

  • Dates can also be used to make these ladoos. Add deseeded dates, ragi flour in the mixer grind them into powder. Add the nuts and ghee and make into ladoos.
  • If you are using sugar add sugar, ragi flour and nuts in mixer, grind them and make it into ladoos.
