About Munagaku fry recipe – Munagaku fry is a side dish made using moringa leaves. This dish is very easy to prepare and healthy. Moringa leaves are nothing but drumstick leaves, it is known as munagaku in telugu, murunga keerai in tamil and saguna in hindi. This dish goes well as side dish for dal, rasam rice, curd rice. There are many variations of this dish, I am showing how we prepare at home.

Munagaku fry

Moringa leaves are considered as a super food because of its health benefits. Many south indian villages have these drumstick trees planted near their houses or in the farms. Every part of the drumstick tree offers great health benefits as they are full of essential nutrients and antioxidants. Drumsticks are used to make curries, sambar, fry etc. and the leaves are used to make dal, fry, powder.

In western countries, moringa powder is extracted from the leaves that are dried and ground.

Munagaku fry recipe – Procedure

1. Firstly, remove moringa leaves from the stems and keep it ready. Dry roast handful of peanuts and grind them coarsely.

2. Heat some oil in a pan, add some mustard seeds and let it splutter. Add one red chilli and fry it.

3. Add the moringa leaves and fry, after sometime the leaves reduce. It takes around 2 minutes.

4. Add salt and turmeric, mix it well and cook it well for sometime. Crush 2 pods of garlic and cook it, it takes 4 to 5 minutes to cook.

5. Now add pea nut powder and red chilli powder and mix it well and roast it for a minute.

6. Munagaku fry or moringa leaves fry is ready.

Ingredients

  • 1 bunch Moringa leaves Munagaku
  • 2 tbsp. peanuts powder
  • 1 tsp Red chilli powder
  • 2 pods garlic
  • ½ tsp mustard seeds
  • 1 no. red chilli
  • ½ tsp turmeric powder
  • 1 tbsp. ground nut oil
  • salt to taste

Notes

You can store left over peanut powder in a air tight container for 1 to 2 months.
