These millet adai’s are very tasty and healthy too. Nutritious and filling, millet adai can be a great alternative for a breakfast or dinner. As we use many types of lentils, these are very flavorful and tasty. Just plan ahead and soak these millets, and you can make these adai for dinner or breakfast.
Millets are highly nutritious and are gluten free. High in fiber, so it keeps you full for a long time. Millets are versatile, you can replace them with rice in any dish. You can use 1 millet or mix of millets to make this recipe.
Ingredients for making Millet Adai
Barnyard millet – I am using barnyard millet for this recipe, you can use any millet of your choice, or combination of millets. These adai taste great with any type of millet.
Lentils or dal’s – You can use any lentil for this adai, try to add few varieties of dal’s. I am using chana dal, urad dal, moong dal and masoor dal.
Red chilli’s and cumin seeds – Red chilli’s add spice to the dish and cumin seeds add flavor, and also improves digestion.
How to make Millet Adai?
First, add millet and dal’s into bowl. Wash and rinse them well
Add enough water, throw in few red chilli’s, cumin seeds and soak them for 8 hours or overnight.
Once soaked, add everything into a jar, along with salt and splash of water.
Grind it into coarse batter and transfer into a bowl. Add onion, carrot and mix well.
On a hot pan, put some batter and spread. Add some oil along the edges.
In a medium flame cook it for 2 minutes on each side. Tasty millet adai is ready.
Notes
- Always make sure to soak the millet and dal for 8 hours or overnight.
- You can use any millet or dal’s of your choice.
- Do not add more water while grinding, add little at first, then add more if needed.
- You can also add ginger to spice the batter.
- You can add other veggies too, apart from onion and carrot.

Ingredients
To soak
- 1 cup Barnyard millet
- ¼ cup Chana dal
- ¼ cup Moong dal
- ¼ cup Masoor dal
- ¼ cup Urad dal
- 1 tsp Cumin seeds jeera
- 3 nos. Red chilli's
To cook
- 1 small finely chopped onion
- 1 grated carrot
- salt to taste
- cooking oil
Instructions
- Wash and soak the ingredients under "To soak" for 8 hours or overnight.
- Once soaked, add everything into a jar, along with salt and splash of water.
- Grind it into coarse batter and transfer into a bowl. Add onion, carrot and mix well.
- On a hot pan, put some batter and spread. Add some oil along the edges.
