Coconut is one of my favorite fruits and we can use it in many ways. When it is tender, we can have coconut water and when it becomes hard, it is used in many south indian dishes. We can use coconut in kurma’s, curry’s etc. the tender coconut water is a good detoxifier.

Coconut rice

Coconut rice is a simple and yet flavorful rice. We just need few ingredients and boiled rice to make this recipe. When you have any left over coconut, you can straight away prepare this dish. This is an easy lunch box recipe, and kids will love this rice. I usually have this rice with raw banana fry, it is a perfect combination. You can also have this with potato fry or have it as is.

Coconut rice recipe – Step by step process

1. First grate the coconut into a bowl and keep it aside. Boil the rice and keep it ready.

2. In a pan, heat some oil, add few mustard seeds and let it splutter, add chana dal and urad dal and fry until golden brown. Add few cashews, red chilli’s, and curry leaves and fry them for a minute.

3. Cashews are fried well, add the grated coconut, mix well. Turn off the flame.

4. Add the boiled rice and required salt, mix well.

5. At last, add few coriander leaves for garnish. tasty coconut rice is ready.

Notes

  1. Boil the rice in an open pot, do not pressure cook it.
  2. Use freshly grated coconut, do not use frozen, dried or packaged ones.

Ingredients

  • 1 cup grated coconut
  • 2 cups boiled rice
  • 1 tsp chana dal
  • 1 tsp urad dal
  • 1 tsp mustard seeds
  • 5 to 6 cashews
  • 2 to 3 chilli's
  • few curry leaves
  • salt to taste
  • 1 tbsp. sesame oil
  • few coriander leaves
