Carrot spinach rice is an easy and tasty lunch box recipe. I always think to pack the lunch boxes with healthy and yet tasty food. Carrot spinach rice is one such easy, tasty and healthy recipe, we use spinach and carrots to prepare this dish.

I usually think to add greens in everyday diet, but adding it in dal or making a fry out of it is boring. So, i prepare such recipes so that we get to have some healthy stuff and tasty too. I added carrots to this which not only gives taste, adds some nice color to this dish. Even kids will love to have this dish.

This carrot spinach rice is an easy lunch box recipe, which you can make it in few minutes. This rice recipe does not require any side dish, else a simple raita will go. If you want, can pair this dish with raw banana fry, ivy gourd fry or any veggie fry.

Carrot spinach rice recipe – Procedure

First, we need a spice powder for this. “Dry roast and grind” the below ingredients. Grind and keep this aside.

  1. Chana dal -1 tsp
  2. Urad dal -1 tsp
  3. Coriander seeds -1 tbsp.
  4. 5 to 6 red chilli’s
  5. Sesame seeds – 1 tsp

Heat some oil in pan, add few mustard seeds and let splutter, add chana dal, urad dal and fry it for a minute. add finely chopped garlic, chopped chilli’s, onion and curry leaves, fry them until onions turn pinkish.

Add finely chopped spinach and fry it until it reduces, moisture releases from the spinach leaves.

Then add grated carrot, mix and cook it well, add turmeric powder and salt. Fry it for 2 minutes.

Add the spice powder and mix it well. You can adjust the spice powder according to your taste.

At last, mix it with boiled rice. Add little ghee, it enhances the taste of the rice.

Carrot spinach rice is ready. Serve it with some raita or you can have it as such.

Notes

  1. You can use any greens for this recipe.
  2. Adding ghee at last enhances tastes, also the rice will not become dry after sometime.
  3. Boil rice nice and fluff, so that it does not become soggy.

Ingredients
  

  • 3 cups Boiled rice
  • 1 cup grated carrot
  • 1 cup chopped spinach
  • 1 tsp mustard seeds
  • 1 tsp chana dal
  • 1 tsp urad dal
  • 1 tsp finely chopped garlic
  • 1 small onion finely chopped
  • 2 green chilli's chopped
  • ½ tsp turmeric
  • 2 tbsp. Spice powder
  • few curry leaves
  • salt to taste

Dry roast and grind

  • 1 tsp chana dal

  • 1 tbsp. coriander seeds
  • 1 tsp sesame seeds
  • 5 to 6 red chilli's
