Carrot halwa recipe – Carrot halwa or gajar ka halwa is a slow cooked sweet which is popular in indian states. It is made with carrots and milk. It is very popular sweet served in most feasts in India.
During winters, i often make carrot halwa. This is very popular sweet in north India during winters. This traditional carrot halwa recipe is made with carrots, milk, ghee and lots of nuts. This recipe is generally made using red Delhi carrots but you can use normal carrots as well.
The fiber in carrots can help keep blood sugar levels under control. And they’re loaded with vitamin A and beta-carotene, which there’s evidence to suggest can lower your diabetes risk. They can strengthen your bones. Carrots have calcium and vitamin K, both of which are important for bone health.
Carrot halwa recipe – Step by step procedure
1. Firstly rinse, peel the carrots and grate them using a grater or a food processor. I am using 2 cups of grated carrot.
2. In a heavy base pan, add some ghee and roast the nuts(of your choice). Take them into a plate.
3. Add grated carrots into it and add 2 cups of full fat milk, cook it in a low flame.
4. After some time milk will begin to reduce slowly. Scrape the sides of the pan to remove the evaporated milk solids.
5. Cook until the milk is reduced add 5 to 6 table spoons of sugar and mix it well.
6. Add crushed cardamom to it and cook. You can use cardamom powder as well.
7. Finally add roasted nuts and mix it well.
8. Tasty and creamy carrot halwa is ready. Enjoy!
Tips
- Use tender and juicy carrots and not the fibrous ones
- Use full fat milk because it gives nice creamy texture to halwa.
Carrot halwa | Gajar ka halwa
Ingredients
- 200 grams Carrots
- 250 ml Full fat milk
- Nuts
- 5 tbsp Sugar
- Ghee
- Cardamom powder
Instructions
- Firstly rinse, peel and grate the carrots a nd keep it aside.
- Take a thick base pan, add some ghee and roast some nuts and take into a plate.
- In the same pan add grated carrots, milk and slow cook them.
- Stir the mixture gradually until the milk thickens.
- Add sugar, cardamom powder and let it cook.
- Finally add the roasted nuts and serve hot
Notes
- Use tender and juicy carrots, do not use fibrous ones.
- Only use full fat milk for creamy texture.
