Carrot egg fry recipe – Procedure
1. First grate carrots and keep it aside. In a pan, heat some oil, add mustard seeds and let it splutter. Add chopped green chilli’s, onion and curry leaves and fry them until onion becomes translucent.
2. Add grated carrot and fry it well, add some salt and mix it well. Add red chilli powder, mix and fry it for a minute.
3. Take four eggs, break and add them. Mix well and fry it well. Add some pepper powder and mix.
4. At last, add some coriander leaves. Carrot egg fry is ready.
Notes
- Do not add lot of carrot, one medium sized carrot will be enough for four eggs.

- 2 green chilli's
- 1 tsp red chilli powder
- few curry leaves
- 1 tsp pepper powder
- salt to taste
- 1 tbsp. oil
- few coriander leaves
