About Capsicum rice recipe – Capsicum rice is a simple dish which is made using capsicum and few spices. It is an easy lunch box recipe and it takes only few minutes to prepare. There are different types of capsicums like green, red and yellow. We can use any capsicum for this dish or combination of the colors.

Capsicum is native to America but it is produced worldwide and used in international cuisines. In India we are using capsicum’s to make many dishes and it can be eaten raw. I am using green capsicum to prepare this recipe. Green capsicum is less in sugar when compared to red and yellow. Capsicum contains lot of minerals, vitamins and anti oxidants. Capsicum’s are good for eye health, Boost immunity, aids in weight loss and reduces anxiety.

Capsicum rice recipe – Preparation

1. First dry roast chana dal, urad dal, coriander seeds, sesame seeds and red chillis. Cool it down and grind it into fine powder.

2. Cut capsicum into small cubes and keep it aside. Boil rice and keep it ready.

Capsicum rice recipe – Cooking

1. Heat some oil in pan, add few mustard seeds and let it splutter. Add slit green chillis, curry leaves and fry it for a minute. Add onion and fry it until it becomes translucent.

2. Add the chopped capsicum and mix it well. Cook the capsicum until it softens. It takes 4 to 5 minutes to cook.

3. Once capsicum softens, add 2 tbsp. of ground masala and mix it well.

4. Now add boiled rice and give it a nice mix. Add coriander leaves and mix.

5. Tasty capsicum rice is ready.

Notes

  • Do not boil rice in pressure cooker, cook in an open pot.
  • Store the left over masala in an air tight container and you can use it later.

Ingredients

For masala

  • 1 tbsp. chana dal
  • 1 tbsp. urad dal
  • 1 tbsp. sesame seeds
  • 1 tbsp. coriander seeds
  • 6 to 7 nos. red chillis

For cooking

  • 1 cup chopped capsicum 1 big capsicum
  • 3 cups boiled rice
  • 1 medium sized onion
  • 2 nos. green chillis
  • few curry leaves
  • ½ tsp mustard seeds
  • 2 tbsp. ground masala
  • 1 tbsp. cooking oil
