Bitter gourd will be one of the least favorite veggie for most of the people. But indian mothers always tell us to eat bitter gourd because of its health benefits. If we include this veggie in our diet frequently, it might not feel that bitter.

Bitter gourd fry

This bitter gourd fry tastes delicious and goes well with rice. I use tamarind water while cooking bitter gourd, it eliminates bitterness from the vegetable. We use very few spices to make this fry, yet very delicious. Do try this recipe and let me know in the comments how it turned out to you.

Bitter gourd fry – cooking procedure

First, wash and cut the bitter gourd into small pieces (half cm cubes). Dry roast peanuts, grind them along with garlic into coarse powder.

Heat some oil in a pan, add mustard seeds, chana dal and urad dal, let crackle. Add curry leaves and fry them.

Add chopped bitter gourd, mix well and fry for 2 minutes.

After 2 minutes, add salt to taste and turmeric powder, mix well and fry for 2 more minutes.

Soak little tamarind in 1/4 cup water and take turmeric juice.

Add the tamarind water to bitter gourd, mix and let it cook for 7 to 8 minutes.

Bitter gourd will be mostly cooked, add red chilli powder and cook for 2 to 3 minutes.

Add ground nut powder, mix well and turn off flame.

Bitter gourd fry is ready.

Notes

  • Adding tamarind juice reduces the bitterness in the vegetable.
  • Select tender ones so that it cooks easily and also tastes better.
  • You can remove seeds if they are hard, if tender do not remove.
  • You can also add chopped onion if you wish.

Ingredients

  • 200 grams Bitter gourd
  • ¼ cup Peanuts
  • 3 cloves garlic
  • 1 tsp chana dal
  • 1 tsp urad dal
  • ½ tsp mustard
  • ¼ tsp turmeric
  • 2 tsp red chilli powder
  • 3 tbsp. tamarind water
  • salt to taste
