Kids love this recipe and you can make this for kid’s lunch box too. Sandwich is very easy to prepare and yet very tasty.
Veg cheese sandwich is made with cheese and veggies of our choice. I am using onion, carrot, corn, capsicums and green peas. You can use any veggies which are available in your pantry. You can prepare this sandwich on a pan, grill or a sandwich maker. I prepare this on a pan because i feel very easy to use and available in every household. I use chilli powder to add some spice so that we can have it without any sauce.
Veg cheese sandwich recipe – Step by step process
1. Take the veggies of your choice and chop them finely. we have to cook these veggies a bit.
2. In a pan, add some olive oil and let it heat. Add chillies and chopped onion into it and saute it.
3. Now add the vegetables and cook them. Do not over cook them as they my become mushy. I am adding veggies one by one because they may have different cooking time. According to it i add the veggies.
4. Once the veggies are slightly cooked add chilli powder to it and mix it well.
5. Now take the bread slice, put the veggie mixture evenly and cheese slice on it. Cover this with one more bread slice.
6. On a pan, apply some butter and toast this sandwich evenly on both sides. Press the sandwich with the ladle so that it cooks evenly on the sides.
7. Tasty veg cheese sandwich is ready.
Tips
- Do not over cook the veggies as they might become mushy.
- You can use brown bread or any healthier breads. I use whole meal bread which tasted great.
- Adding chilli powder gives some spice to the veggie mixture so that we can have it as is.

Ingredients
- carrot
- corn
- onion
- capsicum
- green peas
- 1 tsp olive oil
- green chillies
- red chilli powder
- salt to taste
Instructions
- Take the vegetables for your choice and cut them finely.
- In a pan add olive oil and let it heat. Once oil gets heated add green chillies and onion and saute it.
- Add chopped veggies one by one and cook them slightly.
- Now add chilli powder and mix it well.
- Now take a bread slice, spread the veggie mixture and put a cheese slice and cover it with one more bread slice.
- On a pan apply some butter and toast it nicely on both sides.
- Tasty Veg cheese sandwich is ready.
