Ivy gourd is not just a popular vegetable but also used as a medicine because it offers many health benefits. It controls blood sugar level and improves digestion. It is a good detoxifier because it cleanses the blood.
Dondakaya vepudu is a very simple recipe which is made with very few ingredients. There are many ways to prepare this recipe but i usually prefer to make this way. This fry goes well with just rice or as a side dish for rasam rice or curd rice.
Dondakaya vepudu | Ivy gourd fry- Step by step process:
1. Take a pan, add 2 tbsp oil and let it heat. Once oil gets heated add mustard seeds, chana dal and urad dal. Let the mustard seeds splutter.
2. Add onion and it for 2 minutes until the onion becomes translucent.
3. Add the ivy gourd pieces and fry them for 5 mins. Now add turmeric and salt to taste.
4. On the medium flame fry it nicely until the vegetable is softens. Now add chilli powder and coriander powder and stir it well.
5. Fry it for 5 minutes so that the vegetable get the spice. Check for salt, add more if needed.
6. Tasty dondakaya fry is ready, serve it with hot rice and ghee.

Ingredients
- 400 grams Donda kayalu or Ivy gourd
- 2 tbsp Grond nut oil
- 1 onion
- 1 tbsp chana dal
- 1 tbsp urad dal
- 2 tbsp chilli powder
- 1 tsp Coriander seed powder
- ½ tsp turmeric powder
- salt to taste
Instructions
- Take a pan, add some oil. Once the oil is heated add mustard seeds, chana dal and urad dal.
- Add chopped onion and sauté it until the onion becomes translucent.
- Now add the sliced ivy gourd pieces and give a nice stir and let it fry for 5 minutes.
- Add turmeric powder and required salt and let it cook until the vegetable soften.
- Once the vegetable is cooked add chilli powder and coriander seed powder and give this a nice mix.
- Cook it for another 5 minutes, check for salt add more if needed.
- Simple and delicious dondakaya vepudu is ready. Serve it with hot rice.
Notes
- Cut the vegetable into thin slices so that it can fry easily.
- Add generous amount of chana dal and urad dal because the bite of this dals makes the fry even more tastier. I usually prefer adding more.
