They are rich in fiber when compared to rice and wheat. They are gluten free and have less glycemic index, and hence it is becoming popular now a days. Millets are a package of many vitamins and minerals, and we can easily include in our daily diet.
Millets are rich in antioxidants, helps to control blood sugar levels, lowers cholesterol.
There are various types of millets. Sorghum(jonnalu), Finger Millet(ragi), Foxtail Millet(korralu), Little Millet(saamalu), Kodo Millet(arikelu), Pearl Millet(saddalu), Barnyard Millet(udalu).
How to cook millets? – Procedure
First take 1 cup of millet into a bowl and wash and rinse it well for 3 to 4 times.
Add water into the millet and let it soak for 6 to 8 hours or overnight.
To cook the millet, for 1 portion of millet we need 3 portion of water. So, add 3 cups of water and let it boil.
Once the water is rolling boiling, discard the water from millet and add it into the boiling water.
Mix it well and let it boil in medium heat for 10 to 12 minutes.
Once the millet it cooked, off the flame and let it sit for 5 minutes.
Serve the millet with any curry or side dish as you wish.
Notes
- Always soak millets for 6 to 8 hours before cooking.
- 3:1 water and millet ratio.
