Ladies finger peanut fry is a simple and tasty recipe. There are many variations of ladies finger recipes, but this one recipe i usually love to make at home.
In India we regularly use to make this vegetable fir curry or stir fry. We can use this veggie to make sambar, curry, fry, we can also use with combination of vegetables. Ladies finger is called ad bendi in Hindi, bendakaya in telugu and vendaka in tamil.
Adding ladies finger into our daily diet will have a lot of health benefits. It is good for heart health, relives constipation, aids weight loss and controls blood sugar etc. It is very easy to add this veggie in our daily diet, because there are many tasty recipes.
Ladies finger peanut fry – recipe
First clean the ladies finger and cut them into small pieces as below. Grate some coconut and keep it ready, 1/4th cup of peanuts.
Heat some oil in a pan, add peanuts and fry them until crunchy. It takes 3 to 4 minutes. Transfer them into a bowl.
In same pan, add ladies finger and fry them until the sliminess goes. It takes 6 to 7 minutes.
Then, add salt and turmeric powder and fry it for minute. Grind few garlic cloves and cumin seeds in a motor pestle and add it to the fry.
Add red chilli powder, mix and fry it for 2 minutes.
At last, add grated coconut and peanuts, mix it well. Ladies finger peanut fry is ready.
Serve it with some sambar, dal or have it as it is with rice. Also goes well with rasam rice and curd rice.
Notes
- Adding garlic and cumin seeds is optional, it enhances the taste of the dish.
- Grated coconut adds great taste to this dish, so do not forget to add it.
- Use tender ladies finger to prepare this dish.
