About spinach egg rice recipe – We usually make fried rice using egg, in which we end up adding store bought sauces. I personally do not prefer to use sauces, and i usually prepare my egg rice this way which is super yummy. It is also very healthy because we are using green leaf veggies in this.

Spinach egg rice

Spinach egg rice is a simple lunch box recipe. We can use any greens of our choice to this recipe. i am using amaranth leaves which we call as thotakura in telugu, arakeerai in tamil. These leaves are rich in vitamin A and C, iron, magnesium and potassium. Amaranth leaves are gluten free.

Spinach egg rice – Procedure

1. First boil rice and keep it ready. Meanwhile chop amaranth leaves and required veggies. Heat some oil in a pan, add little mustard and cumin seeds and let it splutter. Add chopped chillies, curry leaves and onion and fry it until onions become translucent.

2. Add chopped amaranth leaves into this and cook it. it reduces gradually while cooking.

3. Add some salt and turmeric powder, mix and cook it well.

4. Leaves are cooked nicely, add coriander seed powder, red chilli powder and garam masala powder and give this a nice mix.

5. Now add eggs to this, pepper and salt if required , mix and cook it well.

6. Add the cooked rice to this and give a nice mix.

7. Tasty spinach egg rice is ready.

Notes

  1. Do not pressure cook the rice, it might become mushy. Boil it in a pan for fluffy rice.
  2. You can use any spinach to prepare this rice like Palak, moringa etc. I used amaranth leaves and it tastes great.
  3. Garam masala is optional, but it enhances the flavor of the dish. I used home made garam masala powder.

Ingredients

250 ml cup measure

  • 2 cups boiled rice
  • 2 cups copped amaranth leaves (one small bunch)
  • 4 nos. eggs
  • 1 medium size onion
  • 1` no. green chilli
  • 1 tsp red chilli powder
  • 1 tsp coriander seed powder
  • 1 tsp pepper powder
  • ½ tsp garam masala powder
  • ½ tsp mustard seeds
  • ½ tsp cumin seeds jeera
  • ½ tsp turmeric powder
  • tbsp. Ground nut oil
  • salt to taste
  • few curry leaves
